Proteins are organic polymers composed of amino acids bonded together in one or more chains. There are four kinds of proteins: enzymes, transport proteins, structural proteins and hormones. Most proteins function as enzymes. Enzymes are biological catalysts. Some proteins transport smaller molecules throughout the body, such as hemoglobin carrying oxygen. Some proteins form structures. The most abundant structural protein is collagen. Hormones are messenger molecules that relay signals, and some of them are proteins.
